What are sturgeon

Sturgeons, the majestic creatures of the Northern Hemisphere, have been gracing our planet for more than 250 million years. Predominantly swimming in the cold waters of the Caspian Sea— nestled between Iran and Russia—and the Amur River, which forms a natural border between China and Russia, these fish have become synonymous with luxury. The waters of these regions are celebrated for producing some of the finest caviar.

Unfortunately, the sturgeon population has faced dire challenges due to overfishing, prompting protective measures to ensure their survival. In 2008, sturgeon fishing in the Caspian Sea was halted, marking a pivotal moment in the fight for their conservation. With a commitment to sustainability, producers began the vital work of raising sturgeon in their natural habitats, using time-honoured methods and deep-rooted expertise passed down through generations. This effort not only helps protect these incredible creatures but also guarantees that the exquisite caviar we cherish can be enjoyed by future generations.
