
What is Caviar?
Caviar is the ultimate luxury, exquisite sturgeon roe with a delicate texture and complex flavours, each pearl bursts with rich, briny essence, delivering a unique experience. Sourced from selected sturgeon, the finest caviars are hand-harvested, ensuring each serving reflects the artistry of premium production.
The history of caviar dates back thousands of years. Ancient civilizations, such as the Persians and Greeks, were among the first to savour caviar. It was considered a delicacy and a symbol of luxury, often served at extravagant banquets. Over time, caviar gained popularity in Europe, especially during the 18th century, when Russian nobility elevated its status.
The word “caviar” originates from the Persian term khaviar, which translates to “egg carrier.” This delicacy is specifically derived from the eggs of the sturgeon, known as roe, which is the mass of eggs found within the ovarian membrane of female sturgeon. The size and colour of caviar vary, influenced by the different sturgeon species. Remarkably, the roe constitutes about 10% to 15% of the sturgeon’s overall mass.
Caviar is produced in several regions around the world, with the most notable sources being countries along the Caspian Sea, such as Iran and Russia. Additionally, caviar production has expanded to other regions, including the United States, France, Italy, and especially China, inparticularly the north east around the Amur river, which boast several native species, Chengdu and in the upper reaches of the Yangste river around Wuhan and Shangroao, where sustainable farming practices are being adopted to ensure the longevity of sturgeon populations. The industry today blends traditional techniques with modern aquaculture, allowing for both authenticity and environmental responsibility in the pursuit of exquisite caviar
